According to the legend, our ancestors came and settled in Taiwan a hundred years ago in order to catch the mullet. When Zhou Xi wrote the history of Changhua County, he said, “The ports of Taiwan have mullets in the winter. It tastes sweet and soft before the Winter Solstice. After the Solstice, it is thin and tastes bad. Take the roe and salt it. Then press it with stone and dry it. The dried roe can be baked to serve with wine.” This has briefly introduced the process of producing a mullet roe. The salting process has not changed much for centuries. In the first three years of the Republic of China, Taiwan used to hire Japanese experts from Nagasaki to teach us technique and processing plants were set up in Kaohsiung and Lukang in the meantime. In fact, after long-term research and improvement of technique, Taiwan has surpassed Japan in making mullet roe. This is one of the reasons why Japanese people prefer Taiwan’s mullet roe.
2.Change the traditional process
"Mullet roe" is a historical and cultural food. Its production completely replies on hand and cannot be done with machine. It was hence home processed in the past. Living room, doorway, and roadside, even edge of the fish market or temple square were all used as processing plants. You could see people dry up their mullet roes almost everywhere in those heydays in Qieding District of Kaohsiung City. But with the rising demand for food safety for modern people, this way of processing has been unable to keep up with the time and needs to have some change.
In recent years, mullet roe no longer has the traditional appearance only. At Zhenfang, it has transformed into a multi-cultural, international new product. The Ministry of Economic Affairs has certified our mullet roe sightseeing factory. Mass media at home and abroad, such as Super Taste and Japanese NHK, have visited the factory one after another. Zhenfang Mullet Roe has become one of the the most representative gourmet gifts in Kaohsiung, Taiwan.
3.From a 71.16 square-feet store to the certified factory (1 square meters = 35.58 square feet)
It has been more than 50 years since Zhen Fang Mullet Reo started the business. The store of the initial generation of operator is in the Yancheng Market, which is a 71.16 square-feet store. Thanks to the trust from customers on our technique and quality production, we have established a good reputation and a solid source of customer. Mr. Lin Yitien, the operator of the second generation has taken over. He actively introduced the specialized process and established the standard operating procedures, making Zhang Fang the first mullet roe factory that obtained the dual certification of ISO22000 and HACCP. It is hard to imagine that such a modern factory was originally a small store filled of mullet roe. This shop, till today, still stands still, keeping the deep and thick feelings with the old customers.
4.Branding the pride of Taiwan – The mullet roe
The high-tech products from Taiwan are world famous, but there are few special fish products or brand which can represent Taiwan while we have rich marine resources. The imperial crabs of Japan, wheel abalone from Mexico, caviar from Iran and Russia, large crab from Yangcheng Lake, China are well-known all over the world. At present, the representative fishing product of Taiwan should be mullet roe except for Taiwan's sea bream. Taiwan has had a mullet roe culture for 400 years, and it is one of the most important fish products. We would like to extend our unique cultural heritage of Taiwan's mullet via “Zhangfang Mullet Roe Experience Factory,” and actively promote mullet roe. We hope it will become another pride of Taiwan.
